Serves 8 persons
Mushrooms are considered a superfood, not just because they taste nice. They are also packed with vitamins, stimulate the immune system and boost bone health.
This soup recipe has it all. Its easy to prepare, its healthy, filling and lush, ideal for the chilly winter months, a soul comforter and especially adored for its velvety texture.
It can stand as an everyday warm meal or as a 1st course on an elaborate dinner!
Suitable for vegetarians. For Vegans and fasting just use a cream substitute.

INGREDIENTS:
700 gr / 1.5 lb variety of fresh Mushrooms, already sliced
200 gr / 7 oz Chestnuts, boiled
1 large Onion, chopped
3 large Cloves, sliced
60 ml / 4 tbsp. Olive Oil
3 Celery Sticks, chopped
5 gr / 0.18 oz sprigs of fresh Thyme
bunch sprigs of fresh, flat Parsley
1.5 lt / 6 cups Warm Water
1 Vegetable stock Cube
cup / 125 ml Single Cream or vegan substitute
Ground Salt and Pepper
Optional to garnish: Some Croutons
