Makes about 54 mini crepes, enough for 6 persons
I realized that although Ive shared so many recipes, I havent posted my recipe for easy Crepes. A staple in my home, as a special breakfast or lunch, these mini crepes are so versatile and always a hit for the whole family.
Unlike pancakes, crpes are thinner because they aren't made with baking powder. Since they are thinner, they are crispier and dont get soggy. This makes them an amazing means to practically any sweet or savory filling or topping you like, somewhat like bread.
Let me show you how to prepare crepes easily and very importantly: the secrets for making a smooth batter!! Watch till the end for my ideas on how to serve them sweet or savory!
Suitable for lacto-ovo Vegetarians.

INGREDIENTS:
Ingredients for the Crepes batter:
1 cup / 250 ml fresh Milk (half-skimmed), lukewarm
1 cup / 125 gr / 4.4 oz All-purpose Flour, sifted
2 medium Eggs @room temp.
2 tbsp. / 30 ml Vegetable Oil (e.g. corn oil)
Extra Vegetable Oil for frying the crepes
1 pinch Sugar
pinch Salt

Ingredients to serve them sweet:
Fresh Raspberries, Blueberries or Strawberries
Whipped Cream
Greek Honey or Jam
Chocolate Sauce or Chocolate Spread or
Pancake Syrup or Maple Syrup and/or Powder Sugar

Ingredients to serve them as savory lunch for 1 pers.:
8 Mini Crepes
1 large slice Ham
2 slices Gouda Cheese + optional: grated Cheese
1 tbsp. Yoghurt or Sour Cream
Pancake Syrup
