Makes about 1.25 lt. sauce
Tomato is undoubtedly the Queen of the summer vegetables although botanically it is a fruit! In the Summer, Greek tomatoes are usually in abundance and are quite cheap. Also, they have been ripened naturally from the sun which means that their taste is very sweet and delicious. Perfect opportunity to harvest them (if you have your own garden) or buy them fresh in big quantities.
Eat them in a Greek Village Salad or Dakos Salad but also use the ones that are very ripe and prepare them into a delicious tomato sauce for the winter months when tomatoes are scarce, not ripened naturally and more expensive.
To make a good homemade sauce is a basic knowledge for good kitchen skills! And especially tomato sauce which is the base for many Greek dishes!
Let me show you how to prepare my own tomato sauce.
Suitable for vegans and fasting.

INGREDIENTS:
1.5 kg / 3lb 5oz Fresh, very ripe Tomatoes
70 ml or a bit more than cup Olive Oil
2.5 tbsp. / 40 ml Tomato paste (puree)
2.5 tbsp. dry Oregano
1 large Onion, finely chopped
2 Garlic Cloves, finely chopped
1 tsp. Smoked sweet Paprika powder
Ground Salt and Pepper
1-2 tsp. Sugar (if needed)
1 bunch fresh Parsley (or basil)
Optional: About 100 gr / 3.5 oz any finely chopped vegetables you like e.g. zucchini, eggplants, capsicum, carrots etc.
