Greek Jam Tart-Pasta Flora in Greek is The ultimate Mommy's treat!! Don't be fooled by its name, because this is definitely not a pasta dish!! Instead it's a delicious tart, with "pasta" meaning in Greek “a piece of sweet”. The tart has a buttery, crispy cookie-like dough & any jam filling. An easy recipe to follow, where you can, of course, use ready-made jam although homemade makes it taste so much better. One of the most beloved sweets for the Greeks, served for breakfast or tea time, it is a common sight in Greek bakeries and pastry shops. Pasta Flora tarts can be made in all sizes, from small individual tarts topped w/jam to large family sized ones. In Greece, Pasta Flora was very fashionable in the 60's & my mom Elsa used to make it quite often, using homemade jam. I have fond memories of my childhood years "helping" her make the long strips on top. I was rolling & moulding them on the table for so long as if they were playdough; at the end they were so dirty that they couldn't be used on the tart anymore...
