How to make ★New Year's Eve Soba noodle soup★〜年越しそばの作り方〜(EP86) | Kitchen Princess Bamboo

Today, I want to share with you, Japanese New Years Eve soba noodles, in Japanese,

“Toshi Koshi Soba”. Toshi means year, Koshi means crossing over.
So it is the soba noodles soup eat at just before midnight.

★New Year's Eve Soba noodle soup★
〈ingredients for easy tempura batter〉
4 tablespoons flour
1 tablespoon potato starch or corn starch
1 tablespoon mayonaise
5 tablespoons icy cold water

2 prawns for each person
〈ingredients for soba dashi〉

30g thick bonito flakes ( or 1 tablespoon Dashi powder)

1L (4 cups) water

2 tablespoons light soy sauce

1 tablespoon miring ( or 1/2 tablespoon sugar)

1/2 teaspoon salt
〈assemble〉

2 bundle of dried soba noodles for 3 people
