Pastitsio or Greek Baked Pasta is for Greeks the most renowned and beloved family dish! With Italian origins (pasticcio=mess, although in Italy it is a completely different recipe) it is the Greek answer to the classic Italian Lasagna. The recipe became "Greek" from the renowned chef Tselemendes @1st half of 20th century. There are many debates on what constitutes the perfect Pastitsio and many versions to try in different regions around Greece! A lot of Greeks become very passionate about their own version of Pastitsio, but I can assure you all versions are equally perfect, since they are all using delicious ingredients. It's not a complicated dish so don't be afraid to try it, but its preparation is very time consuming! This is in fact a family recipe that my Yiayia Polymnia used to make when we were small and we loved it. As my logo implies
