7 Ingredient Super Tender Ginger Scallion Oil Chicken Chinese Chicken in Scallion Sauce Recipe

This Chicken with Ginger Scallion Oil is a simplified version of Singapore Hainanese Chicken Rice, without the rice. You don't want to end up with tough and dry chicken. Use Roland's method to make your chicken super tender. If you don't like chicken legs, use chicken breast instead, but it won't be as tender.

Ingredients:
Serves 4 pax

3 whole chicken legs (about 770g or 27.16oz in total weight)
1 teaspoon salt
2 stalks of spring onion (stem part only)
5g (0.18oz) sliced young ginger

Sauce
=============

Method 1 - Direct cooking
---------------------------------

4 tablespoons cooking oil
2 stalks of spring onion (stem part only)
15g (0.53oz) sliced young ginger
0.5 teaspoon sugar
5 tablespoons light soy sauce
Optional - 1 or 2 teaspoons of sesame oil to add to the aroma

Method 2 - Indirect cooking
---------------------------------

4 tablespoons cooking oil
5g (0.18oz) grated young ginger
2 stalks of spring onion (leafy part only)
0.5 teaspoon sugar
5 tablespoons light soy sauce
