Jollof Rice (Brown Rice Version)

To celebrate World Jollof Rice Day, I've tweaked my usual jollof rice recipe by using brown rice and by eliminating red bell peppers. No special reason, just felt like it :) They say brown rice is much healthier than regular white rice because of the extra fibre, so if you're on your healthy eating grind, perhaps this is the version for you.

Ingredients (serves 2):
- 1 cup brown rice
- 3 large tomatoes
- 2 cloves garlic
- 1 small red onion
- 1/2 cup water
- 1/4 cup coconut oil
- 1 tsp curry powder
- 1 tsp dried thyme
- salt to taste
