Serves 12 persons
A Summer dessert needs to be cool, refreshing and delicately sweet. In Greece we know all about Summer heat, so we have a great selection of the so called Fridge Sweets, to satisfy our sweet tooth.
The dessert I show you today is one of them. The Lemon Mousse is made with Greek strained yoghurt to enhance the lemony flavor. It is an easy dessert to prepare, but looks quite complex to make, with the jelly decoration on top. Find out all my little secrets how to manage this wonderful effect and impress your guests.
Suitable for lacto-ovo Vegetarians

INGREDIENTS:
Ingredients for the jelly:
1 pack / 85 gr / 3 oz Lemon Jello powder
250 ml / 1 cup Boiling Water
250 ml / 1 cup Cold Water
A bit Vegetable Oil
A Pyrex tray
Ingredients for the Lemon Mousse:
8 gr / 0.28 oz / 3-4 Gelatin Sheets
60 ml / 4 tbsp. Cold Water
15 ml / 1 tbsp. Warm Water
750 gr / 1 lb 10 oz / 2.6 cups Greek Strained Yoghurt 0% fat
750 ml / 3 cups Ready, sweetened Whipped Cream
About 30 ml / 2 tbsp. Lemon Juice (from 1 lemon)
Ingredients for the base:
175 gr / 6 oz Long Biscuits (lady fingers)
About cup / 125 ml fresh Orange Juice
Optional: 1 shot Metaxa Brandy
