Pineapple Pulao is an “Awadhi” dish. Awadh is an area around Lucknow in UP. India. There, it is also called “Zarda”, because of its yellow colour. Mostly this dish is made during festivities. This dish can be made in many ways. We have made it with a twist, and that we have added pineapple taste in it.

Pineapple Pulao Ingredients:
1 cup - Basmati Rice.
½ cup - Pineapple pieces (Small)
¾ cup - Sugar
1 - Bay leaf
2-3 - Clove
2-3 - Green cardamom powder
2 Tsp. - Desi Ghee.
2 Tbsp. - Dry fruits (slivers)
3 cup - Water

Pineapple Pulao flavors:
2-3 drops - Pineapple essence
2-3 drops - Kesar essence
¼ Tsp. - Food colour yellow

Pineapple Pulao Preparation:
Cut Pineapple in small (½ inch) pieces,
Slivers Dry fruits
Powder, Green cardamom
Soak rice in 2 cups of water, for 15 minutes

Pineapple Pulao Method:
Heat ghee, in a heavy bottom pan. Add bay leaf, clove, 3 cups of water, sugar and food colour in it. Bring to a boil for 3-4 minutes. Drain rice, add in the boiling syrup, and cook on medium low flame. When the level of rice and syrup becomes the same, add slivers of dry fruits, cardamom powder, Saffron essence, pineapple pieces and Pineapple essence. Cover and cook on a very low flame for 10 minutes. Do not stir very often, otherwise rice grain will break.

Serve:
Cool on room temperature and serve.
