Makes around 18-20 small pcs. or 10 large pcs.
Serves 6-8 persons as meze or 4 persons as main course

Pumpkin Patties are an amazing meze (appetizer) made of grated pumpkin, infused with a combo of Greek cheeses and herbs.
A similar dish to the classic courgette fritters, these patties are baked in the oven instead, for a lighter, healthier alternative, perfect for kids and adults alike!
They are one of the favourites in a long line of delicious Greek vegetable fritters! And since they are oven baked and lighter, you wont be able to eat just one!
Look out for my few tricks for a 100% success.
Suitable for lacto-ovo vegetarians.

INGREDIENTS:
200 gr / 7 oz Yellow Pumpkin, cubed
200 gr / 7 oz Orange Pumpkin, cubed
Less than 1 cup / 100 gr / 3.5 oz Kefalotyri Manis, grated (altern: Pecorino, Kefalograviera)
80 gr / 2.8 oz Feta cheese (barrel, good quality)
Onion, finely chopped
2 Spring Onions, finely chopped (mainly the greens)
About cup / 75 gr / 2.75 oz Self rising Flour
1/2 bunch fresh Parsley, finely chopped
1/2 bunch fresh Basil, finely chopped
1 tsp. Dry Mint
1 large free-range Egg
15 ml / 1 tbsp. fresh Lemon juice
Ground Salt (not too much)
Ground Pepper
2 tbsp. / 30 ml Olive Oil
