INGREDIENTS

Marinating
12 oz (340 g) pork liver, sliced into 1/4 (1/2 cm) thick pieces
2 teaspoons Shaoxing wine (or dry sherry)
1/2 teaspoon salt
1 1/2 teaspoons cornstarch

Sauce
1/4 cup chicken broth
1 tablespoon Shaoxing wine (or dry sherry)
2 tablespoons oyster sauce
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1 1/2 teaspoons sugar
2 teaspoons cornstarch

Stir fry
1 tablespoon peanut oil
1 tablespoon minced ginger
1/2 onion, sliced into bite-size pieces
8 stalks (2 oz / 60 g) garlic chives (or 4 green onions), cut to 2 pieces
