You have probably noticed that I do love all kinds of seasonal fruit cakes. Pumpkin has a special place in my heart, as it's nutritious, healthy and so versatile that it can be used for many sweet and savory dishes!
This pumpkin Bread is one of my most favorites, because it's easy to prepare, perfectly spiced, moist and tangy with the subtle undertones from Greek Yoghurt.
I can definitely vouch that it's a must-try. Perfect for a family Thanksgiving or a Halloween party.
Great for breakfast, coffee, (high) tea or as a school/work snack! Make it with the indisputable Queen of Autumn! Let's begin!
Suitable for lacto-ovo vegetarians.

INGREDIENTS
Ingredients for boiling the pumpkin:
300 gr. / 10.5 oz fresh Pumpkin, cubed
1/3 cup / 80 ml Water

Ingredients for the Bread:
1 & 3/4 cups / 220 gr. / 7.8 oz All-purpose Flour
1/2 cup / 110 gr. / 3.9 oz Butter, semi-melted
2 medium Eggs @ room temperature
1 cup mashed Pumpkin (puree from what we boiled earlier)
1/4 cup / 70 gr. / 2.5 oz Greek Yoghurt 0% fat
3/4 cup / 160 gr. / 5.6 oz light brown Sugar
1/2 cup / 110 gr. / 3.9 oz Sugar
1 tbsp. Mixed-Spices or Pumpkin spices
1 tsp. ground Cinnamon
1 tsp. baking Soda
Pinch of Salt
For topping: 3 tbsp. / 25 gr. / 0.9 oz Pumpkin Seeds and
1.5 tbsp. / 14 gr. / 0.5 oz Sunflower Seeds
