The Pumpkin is undoubtedly the Queen of Autumn. A superfood, full of nutrients and great nutritional value, versatile with so many uses for savory and sweet dishes!
Pumpkin Preserve is one of them! It is prepared very quickly, since it needs minimal cooking. So it is one of the easiest, from a huge range of spoon sweets with seasonal fruits that we love to eat in Greece!
But it has a trick! To keep pumpkin firm, not to melt during boiling, and to stay on the spoon, use lemon with sour, instead of slaked lime (Calcium hydroxide).
Let me show you how.
Suitable for vegans and fasting.

INGREDIENTS:
400 gr / 14 oz Pumpkin, weighed cleaned
330 gr / 11.6 oz / about 1.5 cups Sugar
100 gr / 3.5 oz / about 70 ml Greek Thyme Honey
cup / 125 ml Cold Water
1 tbsp. / 15 ml Lemon Juice
tsp. Sour (citric acid)
1 Cinnamon stick
1 Asteroid Anise
30 gr / 1 oz White Almonds, halves or slivers
