Serves 3-4 persons
Amaranth fresh greens or Vlita (or just horta) in Greek, are delicious, sweet Greens that are traditionally eaten as a beautiful, simple warm Salad!
In this recipe, I show you the extra step to enhance their exquisite taste even further by sauting them with onion and garlic and then serving them with crumbled feta on top!
The taste of this dish is simply amazing and makes a great, warm, Autumnal salad to accompany a large variety of dishes.
Suitable for vegetarians, vegans and fasting can use a feta substitute.

INGREDIENTS:
500 gr / 1 lb 2 oz Fresh Vlita Greens (Amaranth)
1 medium Onion, finely chopped
1-2 Garlic cloves, sliced or minced
cup / 60 ml Extra Virgin Olive Oil
Sea Salt
Black Pepper powder
Lemon juice from 1/2 lemon and 1/2 lemon for garnishing
50 gr / 1.75 oz Feta Cheese, crumbled (or substitute for Vegans)
2 lt. / 8 cups Water for boiling
