Sesame-Miso Salmon & Mushrooms
Ingredients(Serves 2)
4 salmon fillets
1 Welsh onion
1/2 pack shimeji mushrooms
1/2 bag of enoki mushrooms
1+1/2 Tbsp miso
1 tsp sweet bean sauce
1 Tbsp sake
1 Tbsp mirin
2 Tbsp ground sesame seeds
sesame seeds with shichimi
scallions

Directions
1. Cut the Welsh onion diagonally.
2. In a bowl, combine the miso, sweet bean sauce, sake, mirin, and ground sesame seeds.
3. Put the salmon into a microwave-safe dish, top with 1, separate the shimeji and enoki mushrooms into smaller clusters and add on top, then pour on 2.
4. Cover with plastic wrap, then microwave (600w) for 6 minutes.
5. Plate in a serving dish, then scatter sesame seeds with shichimi and scallions on top.
