Simple Smoked Duck Carbonara #shorts

5-ingredient pasta recipe for yours to keep

Ingredients:
250g Smoked Duck
300g Orecchiette shaped Pasta
250g Pecorino Romano
5g Black Pepper
5 Eggs
Salt to taste

Steps:
1. First, boil the water for the pasta and season the water while you prepare the carbonara sauce.
2. Dice smoked duck breast into lardons and render its fat in a pan.
3. Crack 20 rounds of black pepper into the pan while duck fat renders to help toast the black pepper.
4. Drop orchiette into the water and time according to the package.
5. Grind pecorino romano into fine powder and add in about 5 egg yolks into a bowl, whisk into a paste.
6. Add pasta water into egg and cheese mixture to tamper.
7. Drain pasta but reserve pasta water on the side.
8. Add Pasta into pan with rendered duck fat.
9. Add pasta water into the pan bit by bit to emulsify.
10. As the pan cools, add egg and cheese mixture.
11. Keep mixing the carbonara until sauce thickens, add pasta water to loosen sauce if needed.
12. Plate and serve, garnish with pecorino cheese and black pepper.
