Ingredients:
1 tbsp extra-virgin olive oil
1/2 large onion, chopped
3 cloves garlic, finely chopped
500g frozen spinach, thawed at room temp
4-6 fronds fresh dill, finely chopped
4-6 stalks of flat-leaf parsley, chopped
100g feta cheese, crumbled
5-6 sun-dried tomatoes, chopped
3 eggs, lightly beaten
Zest of 1 lemon
Salt and pepper

Crust:
1/2 pack filo pastry, thawed overnight in the fridge, or for 2 hrs at room temp
1 cup extra-virgin olive oil for brushing, more if needed
