Yum Alert! Well, what can be said about this gorgeous dish? Can you think of anything better than fresh spinach, aromatic herbs, spicy Greek cheeses wrapped in an amazing homemade short crust? Because I can't!
Although it's a bit of extra effort to make the short crust pastry, the result is definitely worth it, because this pie can stand as your centerpiece at any special celebration, all year round!
Let me show you how to prepare my very own, unique pie recipe, where I am redefining a classic Greek dish to new levels of elegance AND deliciousness!
Suitable for lacto-ovo Vegetarians.

INGREDIENTS:
Ingredients for the filling:
200 gr / 7 oz Fresh Spinach
2 Spring Onions, finely chopped
bunch Fresh Dill, finely chopped
1 tsp. dry Mint
400 gr / 14 oz Feta Cheese
175 gr / 6 oz Kefalonia Graviera Cheese, grated (altern: Kefalograviera, Gouda)
125 gr / 4.4 oz Halloumi Cheese, grated
2 tbsp. / 30 ml Olive Oil for sauting the spinach
5 tbsp. / 75 ml fresh Milk
2 large Eggs at room temp.
Ground Pepper only!
Ingredients for the short crust Pastry:
400 gr. / 14 oz / 3.2 cups All-purpose Flour
250 gr. / 9 oz Butter (or Margarine) soft, at room temp.
1 tsp. Baking powder
1 large Egg at room temp.
1 small Egg for glazing
tsp. Ground Salt and Ground Pepper
