Spicy Accordion Eggplant
Servings: 2

INGREDIENTS
2 eggplants
Vegetable oil (for frying), as needed

A
2 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 tablespoon oyster sauce
1/2 teaspoon chicken powder
1 teaspoon grated ginger
1 teaspoon grated garlic
1 tablespoon sesame seeds
1 teaspoon chili oil
Scallions (chopped), as needed

PREPARATION
1. Cut off the stem of the eggplants. Cut each eggplant. Do not cut through, keep the bottom together.

2. Flip the eggplant and cut at a 45-degree angle.

3. Deep-fry the eggplants until golden.

4. Mix all of the ingredients A in a bowl. Pour over the fried eggplants (4). Put some chopped scallions.

5. Enjoy!
