Are you bored with making the classic Greek Lentil soup? Then this recipe by my daughter for a spicy, velvety, lush Red Lentil Soup, prepared in a tomato sauce and a large variety of spices, will be a great alternative.
Lentils are in any case, a superfood, which provides all nutrients especially to kids, with minimum cost and effort.
Because there is nothing better, healthier, inexpensive and more nourishing than a rustic, homely lentil soup. Let me show you how she prepares it.
Suitable for vegetarians, vegans and fasting!

INGREDIENTS:
Ingredients for the Soup:
1.3 cups / 250 gr / 9 oz Red Lentils, peeled
60 ml / 4 tbsp. Olive Oil
1 cup / 250 gr / 9 oz Thick Tomato Sauce with tomato pieces
1.5 lt. / 6 cups Water, warm!
1 stock vegetables Cube
1 medium Onion, finely chopped
2 Garlic cloves, finely chopped
1 tsp. ground Cumin
1 tsp. ground Ginger
tsp. ground Coriander
tsp. All-Spice (bahari)
Ground Salt and Pepper
Ingredients for garnishing-per person:
1 tsp. Olive Oil
1 tbsp. Greek Yoghurt (or vegan substitute)
1 tbsp. fresh Coriander, finely chopped
Optional: A pinch of Paprika powder
