I am all against food waste and believe that leftovers should be repurposed or even better revamped in a new recipe.
So what do I do with leftovers from Fasolada (white Bean Soup) which is not enough to feed more than 1 person but I need a simple, low cost meal that will feed us and boost us with energy!?
I make this refreshing Spring Salad which ticks all the right boxes. A healthy, delish Salad for the whole family to enjoy plus a great way to have your kids eat legumes and vegetables.
Let me show you how to prepare it.
Suitable for vegans, lactose-free, gluten-free and for fasting.

INGREDIENTS:
1 cup / 250 ml / 300 gr/ 10.6 oz Boiled White Beans in Tomato Sauce, cold
2 fresh Spring Onions, finely chopped
10 Fresh, Grape Mini Tomatoes, washed
1/2 green Pepper (capsicum), cubed
1/2 bunch fresh Parsley, finely chopped
8-10 big Olives (prefer. Kalamata)
45-60 ml/ 3-4 tbsp. extra virgin Olive Oil (EVOO)
30 ml / 2 tbsp. Vinegar
1/2 tsp. Garlic powder
Ground Salt and Pepper
Optional: A pinch of chili flakes
