Serves 3-4 persons as side dish
I always long to make this Salad when the time of year is right. Meaning when figs are ripe and sweet like honey. Thats when this Salads tastes really come together, to signify the end of hot Summer days and the start of cooler nights and fallen leaves.
Figs and Halloumi are a match made in heaven and adding bacon and a surprise ingredient in the dressing is like an extra, unexpected bonus.
Try this super Salad and youll know what I am talking about.

INGREDIENTS:
Ingredients for the Salad Dressing-Vinaigrette:
3 tbsp. / 45 ml Extra Virgin Olive Oil (EVOO)
1 tbsp. / 15 ml balsamic Vinegar
1 tbsp. / 15 ml Mustard, mild-yellow
1 tbsp. / 15 ml Water
2 tbsp. / 30 ml Grape Molasses-Petimezi (altern: Honey)
Ground Salt and Pepper

Ingredients for the Salad:
100 gr / 3.5 oz Mixed fresh, chopped greens (washed). My mix incl: Iceberg, Lollo Rosso lettuce and Purslane
25 gr / 0.9 oz Rocket leaves (arugula), washed
70 gr / 2.5 oz Halloumi cheese (with basil if possible)
30 gr / 1 oz / 4-5 slices Bacon fried, cold
2 twigs fresh Basil, finely chopped
2 tbsp. grated Parmesan cheese
2 Figs fresh, washed
