Super Yummy! Fried Fish & Bitter Gourd in Bean Sauce Chinese Stir Fry Recipe (Bitter Melon)

Technically this Stir Fried Fish & Bitter Gourd (Bitter Melon) in Bean Sauce is also a one dish meal since it has fish and vegetables all in a dish. In case you're worried that the bitter melon will be very bitter - no worries. Just make sure you remove the white core of the bitter melon because that's the part that makes the melon bitter. Once you have removed it, it should be okay.

Ingredients:
Serves 4 - 5 pax

Ingredients (A)
-------------
Deep fry the ingredients below.
-------------
300g of bitter gourd (bitter melon) - cut into strips
700g of black pomfret

Ingredients (B)
-------------
Fry the ingredients below until fragrant
-------------

1 whole large red onion - cut into strips
20g of ginger - julienne
1 stalk of spring onion (add the stem first followed by the rest when the dish is done)
3 cloves of chopped garlic
3 pieces of bird's eye chilli - chopped

Ingredients (C)
-------------
Once you have fried ingredients (B) until fragrant, add the following as well as deep fried ingredients (A) and boil with the lid on for about 5 - 8 minutes
-------------
2 cups of water
1/2 tablespoon of fermented bean paste
1/2 tablespoon of spicy fermented bean paste
1/2 tablespoon of fermented black beans
1 tablespoon of oyster sauce
1 teaspoon of sugar

Ingredients (D)
-------------
Once you have simmered the above for 5 - 8 minutes, add the following in sequence

Some cornstarch solution
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
Balance spring onion from Ingredients (B)
