Tabbouleh or Tabouli salad is a simple Mediterranean salad made traditionally in Arabic countries (with Lebanese and Syrian roots) and Cyprus. Its main ingredients are Bulgur, lots of fresh parsley and/or mint, tomatoes and it is seasoned with lemon juice and good quality olive oil.
Fresh and bright in color, it's the perfect, healthy and nutritious salad for any time of day and as a side dish with any main course you serve-meat, fish or chicken!
Suitable for vegetarians. For fasting and vegans substitute Feta cheese with a vegan alternative.

INGREDIENTS:
150 gr. / 5.5 oz / 0.8 cup Bulgur
350 ml / 1.4 cups Water
4 tbsp. / 60 ml Extra virgin Olive oil (EVOO)
45 ml / 3 tbsp. Lemon juice
1 tsp. grated Lemon zest
80 gr. / 2.8 oz Feta cheese, in cubes
3-4 twigs fresh Mint, leaves only!
2-3 tbsp. Pomegranate seeds
1.5 tbsp. Pine nuts
7-8 medium sun-dried Tomatoes, cubed (altern: 7-8 Tomatoes Confit)
8 green large Olives, cut in rounds
Ground Salt and Pepper
