Cherry Panna Cotta
Servings: 4 (200-milliliter cups)

INGREDIENTS
Panna cotta
200 milliliters milk
200 milliliters heavy cream
50 grams sugar
Vanilla extract, proper amount
9 grams powdered gelatin
2 tablespoons water

Cherry Compote
24 cherries, pitted
50 grams granulated sugar
1 teaspoon lemon juice

Spearmint, for garnish

PREPARATION
1. Sprinkle powdered gelatin into the 2 tablespoons of water, then heat it in a microwave at 600W for 10 seconds until it becomes liquid.

2. Make the panna cotta: In a pan over low heat, add milk, heavy cream, sugar, and vanilla extract. Turn off the burner, add the gelatin to the mixture, and stir.

3. Move the entire pan into a bowl of ice water and stir with a spatula until thickened. Fill your serving dishes full, then chilli in a fridge for 2 hours.

4. Make the cherry compote: In a pan, add the cherries, granulated sugar, and lemon juice and let it rest for 10 minutes.

5. Once water comes out, heat it over medium heat until boiled, then simmer for 3 minutes. Remove it from the heat and let it cool down.

6. Scoop the cherry compote onto the panna cotta and chill in a fridge for 1 hour.

7. Top with a sprig of mint.

8. Enjoy!
