Easy Shrimp Ceviche
Makes 2 cups

Total Time: 245 minutes

INGREDIENTS
10-12 limes
1 pound (26 to 30) shrimp, peeled, deveined, and diced
2 teaspoons kosher salt
2 jalapeos, seeded and minced (about cup)
1 small red onion, diced (about 2 cups)
2 pints cherry tomatoes, chopped (about 2 cups)
Fresh cilantro leaves, for garnish (optional)
Tortilla chips, for serving

PREPARATION
Halve the limes, then juice using a citrus press or a pair of kitchen tongs. You should have about 1 cup total.
In a medium bowl, combine the shrimp, lime juice, salt, jalapeos, onion, and tomatoes. Mix well.
Cover and refrigerate for about 4 hours, until the shrimp is opaque and firm.
Serve the ceviche chilled. Garnish with cilantro, if desired, and serve with tortilla chips.
