Klang is well-known for its herbal-based Bak Kut Teh, a popular pork rib soup in Singapore. This dry bak kut teh is a unique Klang cuisine. Essentially, the idea is to stir fry pork ribs that have been prepared to make the herbal bak kut teh soup with various condiments. Dried cuttlefish floss gives dry bak kut teh a distinct flavour. The umami flavour of dried cuttlefish coupled with dark soy sauce elevates this meal to new heights. You should try it if you haven't already. Ingredients:
Serves 4 pax

20g dried cuttlefish floss
450g chicken
10 dried chilli (rehydrated & deseeded)
4 cloves chopped garlic
4 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
2 tablespoons oyster sauce
2 tablespoons premium dark soy sauce
4 lady's fingers
50ml (1.69 fl oz) water

Dark soy sauce https://amzn.to/3q9bXoW (we've never tried this brand before so you gotta trial and error until you find a good premium dark soy sauce. The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)
