Cypriot Watermelon Rind Preserves or Glyko Karpouzi or Pattiha (ie. Watermelon in Cypriot), is a delicious "spoon sweet". It is one of the most beloved in a great variety of Preserves prepared all over Greece and Cyprus, depending on the fruit in season. This easy recipe is using only the white rind of the watermelon, which is usually thrown away!
In fact, it's a win-win situation, since you get to eat the watermelon in the summer heat and have the Preserves when you are yearning for something ready to eat, sweet but not too much
