White Chocolate Filled Fondant
Servings: 3

INGREDIENTS
Chocolate dough
50 grams Chocolate (chopped)
40 grams Unsalted butter (at room temperature)
2 Eggs
30 grams Sugar
20 grams Cocoa powder

White ganache
50 grams White chocolate (chopped)
50 milliliters Heavy cream

Powdered sugar

PREPARATION

1. Coat 3 ramekin dishes with a thin layer of butter.

2. Make white ganache. Place white chocolate and heavy cream in a bowl, immerse the bowl in a hot bath (45 C), use a rubber spatula to mix the chocolate and heavy cream until fully melted and smooth.

3. Remove from the hot water bath, pour into a container lined with parchment paper, let cool in the freezer for 1 hour until fully solidified. When it hardens, cut into bite-sized pieces.

4. Make chocolate dough. Place the chopped chocolate and butter in a bowl, immerse in hot bath (45 C), and mix with a rubber spatula until smooth.

5. Remove from hot water, add sugar and cocoa powder, mix well, add eggs one by one, mix well each time.

6. Pour (5) into the ramekin until halfway full, place one of the pieces of white ganache in the center, and top with more chocolate dough .

7. Bake in an electric toaster at 180C for 18 minutes.

8. Remove from mold and place on a plate, sprinkle with powdered sugar

9. Enjoy!
