Have you tried my super amazing Spanakotiropita aka Spinach and Cheese Lattice Pie with short crust? Then the recipe I show you today is a simplified version of that, in order to prepare it quickly in the busy month of December.
The taste of the tartlets is gorgeous as usual, using fresh spinach, aromatic herbs, spicy Greek cheeses, wrapped in a small short crust tart.
They are optionally decorated in a festive way to reflect the Holiday Season; of course, you dont have to decorate them and you can make them all year round!
Let me show you how to prepare these cute tartlets, a classic Greek dish in a new exciting easy-to-pick jacket and ideas on how to serve it in the Holiday Season!
Suitable for lacto-ovo Vegetarians.

INGREDIENTS:
280 gr / 9.8 oz Fresh (or frozen) Spinach, weighed boiled and strained
640 gr / 1 lb 6.7 oz / 2 rolls ready Short crust Pastry (or homemade)
2 Spring Onions, finely chopped
bunch Fresh Dill, finely chopped
200 gr / 7 oz Feta Cheese, crumbled
100 gr / 3.5 oz Graviera Cheese, grated (altern: Kefalograviera, Gruyere, Gouda)
120 gr / 4.2 oz Goat Cheese, grated
2 tbsp. / 30 ml Olive Oil
2 large Eggs at room temp.
1 tbsp. / 14 gr / 0.5 oz Butter, melted
Ground Pepper only!
