Yang Chun Noodles (阳春面)

This steaming bowl of noodles has a rich flavorful broth made from green onions and soy sauce.

INGREDIENTS (1 serving):
- ~50g dried thin noodles
- 1 stalk green onion (chopped)
- napa cabbage leaves
- 1 fried egg
- oil
- 1 tbsp soy sauce
- 1 tsp salt
- 2 cups water

DIRECTIONS:
1. soften napa cabbage leaves in boiling water
2. boil noodles
3. rinse noodles in cold water and drain
4. to make the broth, add oil to a pan on low-medium heat
5. fry the white parts of green onion in oil until golden
6. pour soy sauce into the pan (CAUTION make sure that the oil is not too hot!)
7. pour in water (CAUTION make sure that the oil is not too hot!)
8. add salt and bring broth to a boil
9. top noodles with green parts of green onion
10. pour broth over noodles, napa cabbage leaves, and fried egg
11. serve and enjoy!
