Serves 3-4 people
Just dream that its Greek summer by the sea and lets make together the ultimate summer Ouzo meze. Very easy to make octopus, baked slowly in the oven, in a packet, so that it doesnt dry out and turns juicy, tender and mellow. And then with the broth that stays behind, make a unique in taste lick your fingers boiled Orzo.
A combination of pure summer and sea to enjoy with nice company on a hot summer night by the sea or dream about it in your kitchen, what do you think?
Suitable for fasting.

INGREDIENTS:
Ingredients for the Octopus:
1 Whole Octopus, 850 gr / 1 lb 14 oz (fresh or frozen)
4 tbsp. Olive oil (2 for cooking, 2 for serving)
2 tbsp. balsamic Vinegar (1 for cooking, 1 for serving)
2 Garlic cloves
2 Bay Leaves
tsp. dry Oregano

Ingredients for the Orzo:
250 gr / 9 oz Orzo (village type)
All the broth (juices) from the baked octopus
Approx. 1.35 liters Water
Freshly Ground Salt and Pepper
Optional for garnish: Some Chopped Dill
