It is beaten with olive oil to make a smooth emulsion, to which vinegar is added.This recipe, originating from the Greeks of Constantinople, todays Istanbul, is made with bread and walnuts. Either way you prepare Skordalia, it is a very appetizing and pungent dish for the lovers of garlic!
