Usually, this dish is fried, but we decided to let the crispy outer layer of the chicken form in the oven and it tastes even better this way! INGREDIENTS:- 11 oz. chicken thighs (320g 鸡腿肉)- 4 dried red cayenne peppers (4个 红辣椒)- 4 green peppers (4个 绿辣椒)- 1 poblano pepper- 1/3 cup corn starch (35g 淀粉)- 1.5 tsp. light soy sauce (7-8ml 生抽)- 1.5 tsp. dark soy sauce (7-8ml 老抽)- 2 tbsp. olive oil (30ml 橄榄油)- 2 tsp. cooking wine (10ml 料酒)- 1/2 tsp. salt (2.5g 盐)- 1/4 tsp. sugar (1g 糖)- sichuan pepper powder (花椒粉)DIRECTIONS:1. dice the chicken2. add in sugar, sichuan pepper powder, cooking wine, light and dark soy sauce, and mix. let it marinate for a while so the ingredients sink in.3. chop the peppers4. coat chicken evenly in corn starch, then 1 tbsp. olive oil5. spread the chicken on a baking sheet evenly and then bake in the oven at 450 ºF for 10 minutes. let it sit in the oven for another ten minutes so all the moisture evaporates from the surface giving it a "fried" effect6. add the rest of the olive oil in a heated pan7. add in sichuan pepper powder8. add in the chopped peppers, then the chicken9. add in the salt and stir-fry10. serve and enjoy!MUSIC: https://www.youtube.com/watch?v=1XcJHr6uc28
