Aloo Poori is a fried snack, containing potatoes, but it is surely not a samosa. The twist is that we knead potatoes to make a dough.Ingredients For Poori 250-gram Boiled Potatoes. 1 Cup Refined flour. 1 Cup Wheat flour. 2 Tsp. Ginger-Green Chili Paste1 Tsp. Cumin seeds 1 Tsp. Garam masala 1 Tsp. Dry Mango Powder ½ Tsp. Black Salt 1 Tsp. Sea Salt 1 Tbsp. Finely chopped Coriander and Mint LeavesOil For Frying Aloo Poori Preparation Boil PotatoesMake Ginger-Green Chili Paste Finely chop Coriander and Mint LeavesAloo Poori MethodPeel boiled Potatoes, and mash properly or grate them leaving no lumps. Add all ingredients in potatoes except both the flour. Mix properly, and now add wheat flour and refined flour gradually in the potato mixture, and knead the soft dough as per the video. Oil your palm while kneading, but do not add water. Now make small balls from this dough and roll them flat and round. Prick them and deep fry them golden brown in hot oil. Use a kitchen towel to drain out extra oil. Ingredients for Tomato Chutney3 No’s Tomatoes (Pureed) 1 Tsp. Cumin Seeds 1 Tsp. Black Mustard seeds 1 Tsp. Ginger-Green Chili Paste1 Tbsp. Sugar ½ Tsp. Salt (as per taste) 1 Tsp. Oil (Red Chili and Turmeric Powder, Optional) Tomato Chutney Preparation Puree Tomatoes Make Ginger-Green Chili Paste Tomato Chutney MethodHeat 1 Tsp. oil in a pan, add black mustard and Cumin seeds for tempering, now add Ginger-Green Chili Paste, sauté for few seconds and add tomato puree. Stir it, add sugar and salt. Mix properly, cover and cook for 4-5 minutes. Remove from heat when mixture thickens, and cool it down on room temperature.
