HOW TO MAKE CREAM PAN | The Best Japanese sweet bread (EP266) | Kitchen Princess Bamboo

Today I’m gonna be making Cream Pan.

It’s the best sweet bread in Japan, filled with pastry cream.

The pastry cream is not too sweet or too rich but a little bit chewy than choux cream.

The bread though contains a lot of egg yolks and milk, it’s very moist and a little bit sweet it’s perfect match with the pastry cream.

〈sweet bread dough〉
250g bread flour
50g sugar
2g salt
4g Active dry yeast
2 egg yolks
150ml whole milk
30g unsalted butter

〈pastry cream〉
250ml whole milk
3 egg yolks
75g sugar
10g all-purpose flour
10g cornstarch
1 teaspoon vanilla paste or essence
15g unsalted butter

〈rum icing〉
2 tablespoons powdered sugar
1/2 teaspoon dark rum
