Mapo Nasu : Eggplant version of Mapo Tofu: Japanese Twist on a Chinese Classic~Vegan Recipe

Today I am going to make Mapo Nasu, an eggplant version of Mapo Tofu. Egg plants is in season in summer so we often make this dish in summer, the spicy sauce makes eggplants so tasty and satisfying,
Usually made with ground pork but today, I made it with soy meat to make it lighter.

300g(11 oz) Eggplant
2 tbs soy meat (small bits)
1 tbs Vegetable oil
30g (1 oz) ginger
1~3 clove garlic
1 ts Doubanjan
1 ts chicken soup pastevegan version or vege soup paste
1 cup (240ml) water
tbs Sake
1 tbs soy sauce
1/2 ts sugar
potato starch thickner
1 tbs potato starch
1 tbs water

scallion
sesame oil
