An easy preparation for tiffin or lunch; a soulful recipe. A South Indian fix for your taste buds. Ingredients4 Cup Steamed Rice (Cooked) 1 ½ Cup Freshly Grated Coconut 2 tsp. Split Black Gram Lentil 2 tsp. Yellow Gram Lentil 1 tsp. Mustard Seeds 12-15 Curry Leaves (Chopped) 2-3 Dry Red Chilies 1 tsp. Lemon Juice 1 tbsp. Oil 1 Cup Green Coriander (Chopped) Salt toTaste. Heat Oil in a broad pan or kadhahi. Add Yellow Gram Lentil first, then Split Black Gram Lentil, and Mustard Seeds. Roast them a few second, and then add Curry Leaves and Red Chilies. Stir and add Freshly Grated Coconut. Stir fry all the things for half a minute, then add Steamed Rice and sprinkle Salt. Mix everything well, and Roast the Rice for 2-3 minutes more. Remove from heat. Add Green Coriander and Lemon Juice, mix well and serve hot. Tip Rice should be cooked soft, and grains separated.
