1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon freshly ground black pepper (see note below)
1/4 teaspoon fine sea salt
1 large egg, lightly beaten
2 tablespoons unsalted butter, melted
1 teaspoon hazelnut extract or vanilla extract
1/2 cup (75g) chopped bittersweet chocolate (70%)
1/3 cup (55g) chopped crystallized ginger
