Pink Grapefruit, Soy Marinated Chicken | Umami Insider

Ingredients:
- 1 fillet Boneless Chicken Thigh
- ½ Pink Grapefruit
- Sea salt
- 1 Tbsp Flour
- 1 Tbsp Sun Flower Oil
- 1 tsp Toasted Sesame Seeds

Pink Grapefruit & Soy Marinade:
- 1 Small Onion, grated
- 1 clove Garlic, grated
- 3 Tbsp Pink Grapefruit Juice
- 3 Tbsp Soy Sauce
- 1 Tbsp Sake
- 1 tsp Sea Salt
- ½ tsp Golden Caster Sugar
- 1 tsp Sansho Powder (Japanese Pepper)

Garnishment:
- Boiled Snap Peas
- Boiled Asparagus
- Deep-fried Lotus Root
- Boiled Carrot

Instructions:
Preparation
1. Make some fine cuts on the surface of the skin side of chicken and season with plenty of sea salt.
2. Put all ingredients of the marinade in a bowl and combine well. Marinate the chicken for 1 hour.
3. Remove the pink grapefruit flesh using a knife. Use several wedges to make 3 tablespoons of pink grapefruit juice.

Grill the chicken
1. Remove the chicken from the marinade and apply the plain flour. Keep marinade for later use. Remove any excess flour by patting.
2. Heat a frying pan with oil on high heat and place the chicken skin side down.
3. Keep heating until the skin side turns into a nice golden color.
4. Flip over the chicken on the frying pan and keep grilling on a low heat with a lid until thoroughly cooked. Tilt the frying pan and remove/wipe off the excess liquid.
5. Pour the remaining marinade to the frying pan, and simmer the chicken until the sauce is thick and glazed.
6. Remove from the heat, sprinkle some sesame seeds and slice into biteable sizes.

Make the plate presentation
1. Put the chicken in a pink grapefruit cup and assemble other garnishes.
