Portobello Mushroom Breakfast Sandwich | The Chinese Cuisine

This sandwich features portobello mushrooms as the 'bread' of the sandwich! It is a healthy alternative and tastes just as great. It is a great, quick, breakfast to fix.

INGREDIENTS (1 serving):
- 2 portobello mushroom caps
- 1/2 avocado, sliced
- 1/2 tomato, sliced
- olive oil
- salt
- egg

DIRECTIONS:
1. cook your portobello mushrooms until they are dry (about 15-20 minutes). add salt.
2. meanwhile, slice up 1/2 tomato and 1/2 avocado
3. fry an egg the way you like it (over hard, sunny side up, etc.) add salt.
4. layer the egg, tomato, and avocado between the two mushrooms and enjoy!
