Pumpkin Mont-Blanc Twist on Classic! Noodle-like Autumn Cake For Halloween!

Mont Blanc cakes are from France, but Japanese people are so in love with this classic beauty.

Usually, make this cake with Chestnut, but why not with pumpkin for Halloween for a change?
It's easier to make than it looks, and it's delicious!


Pumpkin Mont-Blanc
5 mini-tart
Pumpkin Pastry Cream
140g(5oz) pumpkin puree
160 ml whole milk
40g (1.4oz) sugar
2 egg yolks
12 teaspoon cornstarch
20g(0.7oz) unsalted butter

Sweet Cocoa Crust
75g (2.6oz) unsalted butter
50g (1.8oz) powdered sugar
1 egg yolk
130g (4.6oz) cake flour
or all-purpose flour
10g (1 tbs) cocoa powder

Almond cream
1 large egg (60g)
60g unsalted butter
60g powdered sugar
60g almond powder

Whipping cream
100ml heavy cream
10g sugar
