Remake with Leftover Vegetable Stir-fry: Chijimi (Korean-Style Pancake)
Serves2

INGREDIENTS
A: 50g of all-purpose flour
A: 30g of potato starch
A: 1 egg
A: 1 tablespoon of soy sauce
A: 60ml of water

Leftover vegetable stir-fry, as needed
1 tablespoon of sesame oil

B (Dipping sauce):

1 teaspoon of soy sauce
1 teaspoon of vinegar
White sesame seeds, as needed
Chili oil, as needed

PREPARATION
1. In a bowl, mix the ingredients of A well, then add the leftover vegetable stir-fry and mix it in.

2. Heat sesame oil in a frying pan over medium heat. Pour the mixture from step 1 into the pan and shape it. Cook until the pancake has a crispy surface with browned spots. Flip it over and repeat the process 3-4 times.

3. When both sides are crispy, it's done.

4. Mix the ingredients of B to make the dipping sauce and serve with the chijimi.

5. Enjoy!

*Note: You can reheat and crisp up the pancake by cutting it into pieces and frying it again with a bit of oil before serving.
