Sambhar Daal | सांभर दाल बनाने का आसान तरीक़ा | South Indian Recipe | | Atima's Kitchen

A staple south Indian recipe, loved by all, with homemade sambhar masala. Now you do not have to sweat yourself in search of the authentic taste. Cook all by yourself "The Sambhar" and feel proud.
For Home Made Sambhar Masala Powder
½ Cup Roasted Black Gram Lentil
½ Cup Roasted Yellow Gram Lentil
½ Cup Roasted Coriander Seeds
2 tsp. Roasted Fenugreek Seeds
½ tsp. Roasted Cumin
5-6 Roasted Dry Red Chillies
½ tsp. Roasted Black pepper
Roast everything on very low heat to prevent from burning. Cool and grind together and make a fine powder. Do not add water. You can store it in dry jar for many months, for further uses.
Preparation for Sambhar Daal.
100 gram Pigeon pea Lentil
½ tsp. Mustard Seeds
2 Dry Red Chillies
15-20 Curry leaves
1 Pinch Asafoetida
1 Onion (Diced)
2 Tomatoes (Diced)
1 Cup Pumpkin (Medium size Chopped)
1 Cup Drum Stick (Medium size Chopped)
½ tsp. Turmeric Powder
½ tsp. Red Chilli Powder
2 tsp. Jaggery.
1 tbsp. Tamarind Pulp
1 tbsp. Refined Oil
Salt to taste
Wash and cook Pigeon pea Lentil with salt and 4 Cups of water for one whistle and then cook for 5-7 minutes more on low heat.
Heat oil in a broad pan, add Asafoetida, Mustard Seeds, Curry leaves and Dry Red Chillies for tempering.
Now add Onion (Diced) and fry on low heat for 2-3 minutes. (Do not burn them). Now add diced Tomatoes and vegetables. Add Turmeric Powder and Salt and mix well. Cover the pan and cook on low heat for few minutes.
This serving is sufficient for four people. So take 4 heaped teaspoonful Sambhar powder and mix with some water, so no lumps remain. Now add this mixture to the semi cooked vegetables, add Tamarind Pulp and Red Chilli Powder. Mix well. Add some water and cover and cook for a few minutes more till the vegetables are soft. Stir occasionally.
Now add the cooked lentil and jaggery in this mixture. Mix properly and cook for 5-7 minutes more, stirring continuously. Add some more water, if needed.
Tip
One heaped teaspoonful of Sambhar Powder is sufficient for one person
