Serves 2 persons as main dish or 4 pers. as side dish
Artichoke is a Springtime vegetable with an exquisite flower, considered a superfood because of its high nutritional value. But its not only that. Artichoke is also quite delicious with a mild nutty flavor similar to asparagus.
When boiled it becomes tender and resembles potato in texture. Hence, this beautiful Spring Salad that combines fresh greens with artichokes served with a delicious, sweet and spicy dressing.
Suitable for vegetarians. For vegans and fasting, substitute honey with maple syrup in the dressing and use substitute cheese flakes.

INGREDIENTS:
Ingredients for the Salad:
300 gr / 10.5 oz / 5-6 Artichokes, fresh or frozen
1 Lemon, cut in 2
A bit of Salt
80 gr / 2.8 oz Mixed fresh, chopped greens. My mix incl: Lettuce, Rocket (rucola), Lollo Rosso lettuce, Radicchio and Purslane
60 gr / 2.1 oz Cherry Tomatoes, halved
2 Spring Onions, finely chopped
2 tbsp. fresh Dill, finely chopped
2 tbsp. fresh Parsley, finely chopped
30 gr / 1 oz Kefalograviera Cheese in flakes (altern: Parmesan cheese)
cup / 40 gr / 1.4 oz Pine nuts, roasted
Optional: 1 Florina, Sweet Roasted Pepper, cut in strips
Ingredients for the Salad Dressing:
50 ml / 3.2 tbsp. Extra Virgin Olive Oil
20 ml / 1.3 tbsp. Red Wine Vinegar
30 ml / 2 tbsp. Greek Honey
1 tbsp. Yellow Mustard
tsp. Garlic powder
Freshly Ground Salt and Pepper
