Sticky Summer Somen noodles | Nagaimo and Okura Somen Noodles (EP289) | Kitchen Princess Bamboo

Today I am going to be making Sticky Summer Somen noodles.

Nagaimo is a yam that makes s slimy and sticky paste when you grade it. We love it so much, especially in summer.

And Okra also makes a sticky texture when you mixed with the sauce.

The sticky and slippery texture is very appreciated in Japanese cooking because it has many health benefits.

Mentsuyu (sauce for Japanese Noodles)
20g Katsuobushi (dried bonito flakes)
1 piece Kombu Kelp
2 cups Mirin (400ml)
2 cups Regular Soy sauce (400ml)

1 bunch Somen noodle per serving
2 inches Nagaimo (long yam) per serving
2~3 Okura per serving
1 Umeboshi per serving
2 tablespoons Mentsuyu + 2 tablespoons water per serving
