Stir-Fried Beancurd Strips with Mushrooms! | The Chinese Cuisine

This is a flavorful dish with a spicy kick!

INGREDIENTS:
- dried beancurd sticks (~ 2 sticks or 1 cup)
- 1 stalk green onion
- 1 clove garlic
- several slices ginger
- 400g or 2 bags enoki mushrooms
- 1/2 tbsp. broad bean paste with chili
- cooking wine
- soy sauce
- 1 tsp. sugar
- dash of salt

DIRECTIONS:
1. soak dried beancurd sticks in water for several hours until they soften
2. cut ginger into thin strips, garlic into thin slices, chop green onions, cut beancurd into thin strips
3. cut off the bottom 1 inch of the enoki mushrooms
4. add oil to pan on med-hi heat and fry the ginger strips in the oil
5. add garlic slices into the oil
6. add broad bean paste with chili into the pan
7. add mushrooms and beancurd strips
8. stir-fry and add in a splash of cooking wine, soy sauce, sugar, green onions, and a dash of salt
9. serve and enjoy!
