Sweet Potato Churros
Servings: 2

INGREDIENTS
300g sweet potatoes
1 tablespoon water

A
30g sugar
60g rice flour
50ml hot water

1 egg
Some granulated sugar
Some vegetable oil

PREPARATION
1. Peel potatoes and cut into bite-sized pieces. Put potatoes in a heat-proof dish, add water, and cover with a food wrap. Microwave at 600W for 5 to 6 minutes until soften.

2. Mash the potatoes. With a sieve, make it smoother.

3. Add all A ingredients into (2) and mix well. Add the beaten egg gradually. If needed, add water to make it smoother.

4. Put mashed potatoes (3) into a piping bag. Pipe the potatoes onto parchment paper (cut into smaller pieces).

5. Place (4) with the paper into the oil (170C). Remove the paper when outside is cooked. Cook until golden. Dust churros with some sugar.

6. Enjoy!
