Szechuan Spicy Stir Fry Vegetables w/ Beef Mala Xiang Guo Chinese Food Recipe

Mala stir fry and mala soup have slowly but steadily become a staple in Singapore. You can almost always find a stall in one of our foodcourts in Singapore. This certainly wasn't the case a few years ago until more and more mainland Chinese start to come over to Singapore to work and stay. We really have to thank them for introducing this super yummy dish to us.

Ingredients:
Serves 4 - 5 pax

200g lotus root - sliced
1 potato - sliced
150g Chinese cabbage
60g dried beancurd skin
200g enoki mushrooms
A handful of sweet potato thick vermicelli
Some cooking oil
1 pc of cinnamon bark
1 pc of star anise
1/2 teaspoon of cloves
1 - 2 pcs of bayleaf
20 pcs of dried chilli - hydrated & deseeded
1 thumb size ginger - sliced
2 tablespoons of spicy broad bean paste
1 tablespoon of spicy chilli sauce
270g of marinated beef (w/ 1 tsp cornflour & 1 tbsp water)
1.5 tablespoons of crushed Sichuan peppercorn
1 stalk of Chinese parsley
40g of dry roasted peanuts
2 tablespoons of light soya sauce


Beef can be replaced with pork or chicke.
